Though I am not a great cook, today I am sharing a recipe and a great story. The story is not that great actually. It is about the guy I used to date and annoy a lot. And he was a great follower of the fact that good food can cheer anyone up. He was always like “Cook woman!”, whenever there was a situation when I have annoyed him to the core!
But putting up with him made me like an experiment with Italian cuisine because he is a great pasta lover. He can eat pasta day in and day out. And that is why this one time when we had a huge fight and I knew that only a great tasting pasta can win over his heart. Fights end and the situations like these are short-lived, what stays forever is the good food. Good food which can be recreated time and again. I really hope that you like the recipe that I am sharing.
Butter Garlic and White Wine Pasta
Topped with loads of herbs and oodles of love

50 grams (1 cup loosely packed) fresh herbs ( I used a mix of Oregano, Basil, Cilantro and Mint)
2 medium-sized onions
6-8 Garlic Cloves
1 Bayleaf
250 ml( 1 cup) white wine
500 ml (2 cups) chicken stock
180 ml (3/4 cup) fresh cream
2 tablespoon butter
3 tablespoon Olive oil
1/2 teaspoon red chilli flakes
Salt and pepper to taste

Method
1. Cook the pasta in a large pot of boiling water. Add salt generously while cooking. Use low sodium salt and be a li’l less worried!
2. Roast the bread slices using 1 tablespoon of olive oil. Make it as crispy as you can.
3. Finely chop the garlic and onions.
5. Deglaze with white wine. It is okay to drink a li’l and be tipsy – prepares you better for the after dinner action 😉
6. Add the bayleaf and simmer for 3-4 minutes.
7. Now add the chicken stock and cook for another 3-4 minutes. Id the sauce seems dry, you can add more stock.
8. Lower the flame and add the fresh cream and butter. Stir continously. If your sauce seems dry, add more cream.
11. Wash the fresh herbs and chop them finely.
12. Mix the fresh herbs with the bread crumbs. Do this, in the end, to avoid the crusty bread from getting soggy.
13. Garnish the pasta with the crumbs and herbs. You can also use lemon zest for garnishing.
You can always improvise the recipe according to your taste. For example, you can use freshly prepared vegetable stock if you don’t have chicken stock or want to avoid using canned stock. You can also add some greens to this recipe, like spinach and broccoli.
